This sausage and sauerkraut skillet recipe is the perfect solution for the busy week night dinner rush. It’s a simple, hearty meal that even the kids will enjoy.

I love feeding my family whole, nutritious foods for every meal. That can be a challenge though on days we’ve been busy in the garden, running errands or doing whatever else life has thrown our way. This meal is quick and easy to throw together so I don’t have to compromise on nutrition for convenience.
Sauerkraut is a great way to incorporate some healthy probiotics into a meal. I like to use homemade to optimize the nutrients, but store bought can work just fine if you’re in a pinch. Throw in some potatoes as well and you’ve got a quick and hearty meal to enjoy!

Ingredients
Butter or oil- I prefer salter butter, but any type of oil you normally cook with will work.
Yellow onion- diced to your preference. We’re onion lovers to we enjoy bigger chunks.
Sausage- any type will work here. We use smoked beef kielbasa, but you could use your favorite kind from the store, or even bratwurst. Cut this into 1/4 inch pieces. My kielbasa was fully cooked already, but if you’re using raw bratwurst be sure to fully cook before adding.
Potato- red or golden, cubed into smaller pieces so they will cook faster.
Sauerkraut- homemade or store bought. Canned sauerkraut is lacking in the good bacteria that makes fermented foods so nutritious, so if buying store bought try to find the refrigerated sauerkraut.
Salt and pepper
Tools you may need
Cast iron skillet, or large skillet of choice.
Knife
Cutting board
Wooden spoon or stirring utensil of choice

Sauerkraut is fermented cabbage that is packed full of Vitamin C, various minerals and immune boosting probiotics. We want to eat foods rich in probiotics in order to improve our gut health, which has been linked to better overall health and even improved mental health. How to Make Sauerkraut Sausage Skillet
Prep your ingredients
Start by gathering all your ingredients.
Cut the potatoes into cubes. Dice the onions how you prefer. Cut the sausage (precooked) into 1/4 pieces.

Cook the potatoes
With your skillet on medium heat, melt your butter or add your oil to the pan. Then add your cubed potatoes and cook until slightly soft, about 5 minutes. Stir occasionally so they don’t stick to the pan.
Add onions and sausage
Once the potatoes are cooked go ahead and add in your sausage and onions. Cook until sausage is heated through and onions are fragrant and translucent, about another 5-7 minutes.

Add the sauerkraut
Turn the heat down to a medium low and add the sauerkraut. You’ll want to be sure to only gently cook the sauerkraut until warm. If overcooked, it will kill a lot of those healthy probiotics that make this dish so nutritious!
Remove from heat, add salt and pepper to taste, and enjoy!
Sauerkraut Sausage Skillet
Ingredients
- 1 Tbsp butter, or oil of choice
- 1 medium yellow onion diced
- 1 lb beef kielbasa or sausage of choice if not precooked sausage, be sure to cook thoroughly first.
- 16 oz sauerkraut homemade or store bought
- 4-6 medium yellow potatoes cubed
- Salt and pepper to taste
Instructions
- Prep all the ingredients by dicing the onion, cubing the potato and sausage
- With a cast iron skillet on medium heat, add butter (or oil) to pan and let melt. Add cubed potatoes to skillet and cook until slightly soft, about 5 minutes, stirring occasionally.
- Add cubed sausage and diced onions. Cook until onions are fragrant and translucent, and sausage is heated through, about 5-7 minutes.
- Turn heat to medium low and add sauerkraut. Cook until just heated.
- Remove from heat and add salt and pepper to taste.
